Blueberry Coffee Cake 



A simple decadent blueberry cake with the richness of coffee



What you need for this  cake :

  • 2 and 1/2 cup All Purpose Flour
  • ½ cup custard powder
  • ½ cup coffee extract
  • 1 cup milk
  • 1/2 cup fresh blueberries
  • 2 eggs
  • 1 and 1/3rd cup powdered sugar
  • 2 and 1/2 tsp baking powder
  • 1/2 cup oil (use sunflower or olive oil only or a mixture of both)
  • Vanilla essence about 1 tsp


Steps To Make:

  • Sieve all the dry ingredients and mix them together.
  • Mix milk and coffee extract.
  • Break 2 eggs and whisk together.
  • Add vanilla essence to it.
  • Mix all the ingredients together (i.e. The dry with the wet )
  • Blend till a nice consistency is achieved.
  • Grease a baking tin and Preheat oven to 180 degrees C for 10 minutes.
  • Pour the batter to the cake tin and gently tap from sides.
  • Bake the cake for 45 to 50 minutes.
  • Let it cool down before you cut
