Chicken Quinoa Mushroom Broccoli - One Pot Meal

The Whole Chicken Legs Marinated and Grilled in Russian Salad Dressing, Served with Creamy Mushroom and Broccoli and Bed Of Quinoa Pilaf. All Super food combined in one plate to make a one pot meal for your non guilty indulgence. 


What You Need to Cook Chicken :

  • Russian Salad Dressing
  • Whole Chicken legs
  • Adjust seasoning

Steps To Cook:

  • Marinate Chicken in salad dressing.
  • Preheat Oven at 220 degree centigrade.
  • Grill chicken for 15 to 20 minutes or till chicken is done but still juicy.

What You Need to Cook Mushroom and Broccoli: 

  • 2 tsp butter
  • 2 tsp chopped onion
  • 2 tsp chopped garlic
  • 250 grams button mushroom chopped
  • 250 grams broccoli
  • Salt and Pepper to taste
  • ½ cup crème
  • 2 tbsp grated cheese
  • Italian Seasoning Mix or any other herb mix of your choice

Steps to make :

  • Heat butter in a pan
  • Add garlic and onions. Cook till it turns pink
  • Add mushrooms and cook till for 4 to 5 minutes
  • Add broccoli which has been blanched earlier
  • Add seasoning. Cover and cook till mushrooms are cooked
  • Add cream, grated cheese and herb mix
  • Add little water if required
  • Mix everything well

What You Need For Quinoa:

Cook Quinoa as per packet instructions
Add some cranberry, chopped almonds, squeeze lemon juice.
Add salt and pepper for seasoning.
