The Ultimate Lemon Yogurt Berry Cake


The fresh and citrusy taste of lemon when mixed with sweet strawberries contributes to a nice tang to the cake. It is one of the best tasting cakes which I have baked so far. Since, I am pathetic when it comes to cake decoration, I decided to keep it simple. Poured some melted white chocolate on the top and garnished with freshly cut strawberries and lemon wedges.

What You Need For the cake:

  • 2 cup all-purpose flour
  • ½ cup custard powder
  • 1 and ½ cup powdered sugar
  • 2 tsp baking powder
  • 1 cup oil or butter
  • 1 tsp vanilla essence
  • 1 cup greek style yogurt
  • 2 Lemon- Juice extracted
  • 2 eggs
  • ½ cup fresh strawberries chopped
  • ½ tsp lemon zest


Steps To Make:


  • Preheat oven to 180 degree centigrade
  • Seive All Purpose Flour, baking powder, powdered sugar and custard powder
  • Break eggs in a bowl.
  • Add oil or butter and beat nicely with an egg whisker
  • Add yogurt, vanilla essence, lemon juice, lemon zest and mix everything well.
  • Add the dry ingredients in small batches and mix well in one direction
  • Beat with an electric beater for about 8 to 10 minutes
  • Finally, add fresh strawberries and beat for 1 min more.
  • Grease the baking tray, pour the batter and bake it for 38 to 40 minutes at 180 degree centigrade.
  • Do a knife test to confirm that the cake has nicely baked
  • Let it cool down completely before you de-mould and cut and serve
