Saffron Caramel Pilaf


The gentle Pilaf with a subtle hint of saffron, bettered with pineapple , crowned with red cherries  and bleached with caramel . There cannot be a better recipe to pamper yourself.

What You Need:

  • 1 cup Basmati Rice
  • 1 cup milk
  • 1 cup water
  • 2 tsp ghee
  • 2 green cardamom
  • 2 cloves
  • 7 to 8 dried red cherries
  • 1 tbsp. cashew nuts
  • 1 tbsp. raisins
  • Handful of green peas
  • 1 cup pineapple chopped
  • Pinch of salt
  • 1 tsp saffron
  • 2 to 3 tbsp brown sugar based on the sweetness you want.


Steps To Make:

  • Soak Basmati Rice in water for 30 minutes.
  • Heat 2 tsp ghee in a non-stick skillet.
  • Add cardamom and cloves.
  • Add Basamti Rice and fry the rice for 2 to 3 minutes
  • Add green peas, cherries, raisins and fry again for couple of minutes
  • Switch off the flame.
  • Heat 1 cup of milk in a saucepan.
  • Add saffron to it and let the colour dissolve in milk.
  • Pour this concoction over the rice.
  • In a separate pan , add pineapple and brown sugar and cook till sugar caramelizes and coats the pineapple nicely.
  • Add this mixture to rice.
  • Add 1 cup of milk and pinch of salt.
  • Cover and cook on lowest flame till rice is perfectly cooked. This will take about 12 to 15 minutes .
  • Enjoy your meal.
